Wilton Cake Class at Michael’s: Week Three

Week Three was the best! We really got to use our tips, learned how to fill our cupcakes, and how the fancy cupcake shops ice their yummies. My favorite part was learning how to use the leaf tip. Not sure why the course doesn’t teach you how to do all of the tips before you ice your first cake, but I’m sure they have a reason. It was just not as feasible doing the roses and leaves on cupcakes… since they’re tiny.

So many tips, so little time!

I asked Prince Liam what kind of cupcakes he’d like — he’s more a pie guy, than cake… but I’ll always take the cake — and he said key lime! So, I made the curd from scratch (it takes a load of sugar), and turned a boxed lemon cake mix into lime by adding a wee bit of green food color and key lime juice.
